One of my favourite things about this salad is you can put it inside a whole-wheat wrap or on top of some quinoa for a heartier meal.
It really reminds me of something you’d see on a pub style restaurant menu, but much healthier!

They have just the right amount of spice without being too overpowering. That hot sauce flavour pairs extremely well with the greek yogurt ranch.
Think, chicken wings. But vegetarian.

How To Make Greek Yogurt Ranch
The star of this salad is the Greek yogurt ranch.
Not only is it creamy, and packed with flavour; but it’s also full of protein, calcium and literally contains less than half the fat of its traditional counterparts.
Since it’s 100% homemade, you can feel confident knowing it is made with natural ingredients. Which means no fillers, preservatives or thickeners.
Also, it doubles as a great dip!
TIP: double the recipe and skip the water for a thick, easy to dip spread. Perfect for veggies, pretzels, crackers and more.

Buffalo Chickpea Salad with Greek Yogurt Ranch
Ingredients
Salad
- 6 cups romaine lettuce washed and chopped
- 1 cup buffalo hot sauce chickpeas **see recipe below
- 15 cherry tomatoes halved
- ¼ cup cucumber sliced into half-moons
- 2 tbsp feta crumbled
- 1 tbsp green onions
Greek Yogurt Ranch
- 4 tbsp plain greek yogurt I used 0%, but any variety works
- 1 tbsp apple cider vineager
- ½ tsp dried dill
- ¼ tsp dried parsley
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ⅛ tsp salt more to taste
- 1 tsp water to thin, optional
- ½ tsp honey optional
Instructions
- To make the dressing, add all ingredients into a small jar and whisk or shake, until well combined.
- Adjust seasonings as needed and place the jar in the fridge to allow flavours to meld.
- Meanwhile, if you haven't already, make a batch of the
Buffalo Hot Sauce Chickpeas. - To assemble the salad, add the lettuce, tomatoes, and cucumbers into a large bowl.
- Mix in the greek yogurt ranch to coat.
- Divide the salad mixture into two bowls and top with buffalo chickpeas, feta cheese and green onions.
- Enjoy immediately.
