Vegetarian Hummus Pita Pizza

Who doesn’t love pizza? A crispy crust, a flavourful sauce and unlimited topping combinations. Pizza really is one of the world’s greatest culinary inventions. Not to take any glory away from a traditional pie (ie. flour dough, tomato sauce and mozzarella cheese) but this vegetarian hummus pita pizza is tasty, healthy and impressively quick.

On nights when I would get off work late, some version of this pita pizza saved me from extreme hunger. I always make sure to have the ingredients on hand so that I can whip up a delicious pizza at any hour in about 15 minutes.

Weird flex, I know.

This fun recipe will impress any pizza lover. Undeniably delicious with fresh vegetables, a creamy base, salty feta and herbs. This pita pizza can be made easily in an oven or even an airfryer.

Whole Wheat Pita

Feel free to use white pita bread if that’s what you have on hand or if you simply prefer it. However, the style of the pita is important here. For this recipe use a thin pita that is chewy in texture and easily torn. Once baked, this will create a crispy, sturdy crust to die for. Avoid any thick, Greek-style pitas as they are too dense and heavy to crisp up properly.

Roasted Red Pepper Hummus

Instead of a traditional red sauce, I opted for a creamy, red pepper hummus that is packed with protein and flavour. Make your own, or use store-bought hummus; I like the Summer Fresh brand.

Veggies/Toppings

When it comes to the vegetables, feel free to use whatever you have available. I used zucchini and cherry tomatoes in this recipe which is a classic combo.

Tip: Use herbs whenever possible. Fresh or dried, either will add a huge boost of flavour.

Feta Cheese

Once your vegetarian hummus pita pizza is out of the oven, you will finish it off with a generous serving of feta cheese. The warmth of the freshly baked pita pizza will melt the cheese ever so slightly resulting in a ultra creamy texture and decadent taste.

Vegan alternative: For my lovely vegans out there, simply omit the feta or use a vegan version. You can also sprinkle my 5-Minute Vegan Parmesan Cheese on top.

Vegetarian Hummus Pita Pizza

A healthy homemade alternative to your usual Friday night pizza delivery. Crispy baked pita crust, roasted red pepper hummus and loaded with vegetables. Topped with some creamy, tangy feta cheese and some fresh basil.

Ingredients

  • 2 large whole-wheat pita bread look for a thinner variety, not greek style.
  • 1/2 cup roasted red pepper hummus homemade or store bought
  • 1/2 cup zucchini squash thinly sliced rounds
  • 1/2 cup grape/cherry tomatoes halved
  • 2 tsp dried herb blend optional
  • 1/4 cup feta cheese crumbled, omit if vegan
  • 2 tbsp fresh basil
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 400 degrees and chop the vegetables.
  • To assemble the pizzas, divide and spread the hummus evenly onto both pitas.
  • Top pitas with zucchini and tomatoes. Sprinkle with dried herbs.
  • Place pitas in the oven on a tray lined with parchment paper.
  • Cook for 10-15 minutes, or until the pita turns golden brown on the edges. Vegetables should be slightly tender.
  • Once cooked, remove from oven and top with feta cheese, fresh basil and a drizzle of olive oil.
  • Cut the pitas into 4 slices and enjoy immediately.
