I don’t think it’s possible to have a food blog without an avocado toast recipe. By far one of the most popular items on any brunch menu, the humble avocado has evolved. With so many ways to dress it up, it’s no wonder the masses are opting for this toast. This Avocado Toast with Tomatoes, Feta + Balsamic Glaze is the perfect introduction to this trendy fare.
When I was younger, I didn’t really like avocados. I thought they were weird and tasteless.
What the younger me failed to see was the beautiful blank canvas of an avocado. With just a little salt, this simple fruit turns into an absolute dream for the palate. The creamy texture is like no other and can bring a level of WOW to any dish. As far as health goes, avocado is an excellent source of fat that keeps your brain healthy and your stomach full.
I love tomatoes with avocado, they just vibe together. The acidic, sweetness compliments the creamy texture perfectly. Also, the colour contrast with the red and green is visually stunning; and it’s true that you eat with your eyes first.
For a salty addition, feta is the star here. It provides just the right amount of flavour, without overpowering the avocado. For my vegan friends out there, I love adding sliced olives in place of the feta. You don’t want to miss out on that salty kick.
To finish this avocado toast, a drizzle of balsamic glaze to tie it all together. Do not be discouraged, this glaze can be made in 5 minutes and is SO worth it.

Avocado Toast with Tomatoes, Feta + Balsamic Glaze
Ingredients
- 2 slices multigrain bread toasted
- 1 medium avocado
- 10 cherry/grape tomatoes halved
- 2 tbsp feta cheese crumbled
- 2 tbsp fresh basil thinly sliced
- ¼ cup balsamic vinegar
- 1 tbsp honey/maple syrup
- pinch of sea salt
- pinch of pepper
- pinch of chilli flakes optional
Instructions
Balsamic Glaze
- In a small saucepan, warm the balsamic vinegar and honey/maple syrup over medium heat.
- Bring mixture to boil, stirring often.
- Cook until mixture thickens, about 5 minutes. Stirring often.
- Remove from heat and let cool slightly. Be sure to use immediately or the mixture will harden and be difficult to use.
Avocado Toast
- Slice avocado in half length-wise and remove the pit. Dig out the flesh and place in a small bowl. Mash with a fork and finish with a pinch of salt.
- Spread the mashed avocado evenly onto each piece of toast.
- Top with sliced tomatoes, crumbled feta, balsamic glaze, fresh basil, salt, pepper, and chilli flakes if using.
- Enjoy immediately.
