Made with simple ingredients and 100% vegan, you can literally eat the batter safely.

Double Chocolate Almond Cookies

Vegan cookies with a soft and gooey center. Loaded with chunks of chocolate, chopped almonds, and topped with sea salt.

Ingredients

  • 4 tbsp coconut oil melted
  • ¾ cup coconut sugar
  • 5 tbsp cococa powder
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 3 tbsp almonds chopped
  • 4 tbsp almond milk unsweetened
  • 2 tbsp tahini
  • ½ cup vegan chocolate chips I used Enjoy Life brand
  • pinch of sea salt

Instructions

  • Preheat the oven to 325° and line a large baking sheet with parchament paper.
  • In a large bowl combine the flour, coconut sugar, cocoa powder, almonds, baking powder and a pinch of salt.
  • Pour in the melted coconut oil, tahini and the almond milk. Use your hands or a large spoon to combine until a dough forms.
  • Shape the cookie dough into discs with hands and sprinkle with a generous amount of sea salt onto the baking tray.
  • Place the tray in the oven and remove after 10 minutes. The cookies will harden as they cool.
