Double Chocolate Almond Cookies
Ingredients
- 4 tbsp coconut oil melted
- ¾ cup coconut sugar
- 5 tbsp cococa powder
- 1 cup all purpose flour
- 1 tsp baking powder
- 3 tbsp almonds chopped
- 4 tbsp almond milk unsweetened
- 2 tbsp tahini
- ½ cup vegan chocolate chips I used Enjoy Life brand
- pinch of sea salt
Instructions
- Preheat the oven to 325° and line a large baking sheet with parchament paper.
- In a large bowl combine the flour, coconut sugar, cocoa powder, almonds, baking powder and a pinch of salt.
- Pour in the melted coconut oil, tahini and the almond milk. Use your hands or a large spoon to combine until a dough forms.
- Shape the cookie dough into discs with hands and sprinkle with a generous amount of sea salt onto the baking tray.
- Place the tray in the oven and remove after 10 minutes. The cookies will harden as they cool.
