These Everyday Breakfast Tacos come together harmoniously using one small pan. Highlighting simple, fresh ingredients like flour tortillas, eggs, bell peppers and spicy cheese. They are packed with protein, vegetables and flavour.
I’ve been making these breakfast tacos on repeat for some time now. Often with slight variations, and mostly dependent on what I have in the fridge. But one thing remains constant, in my house, we can eat them every day.
Since this recipe comes together quickly in one pan, it’s important to have all ingredients prepped and ready to go. This means the veggies are washed and sliced, the cheese is grated, the eggs are whisked, and all other components/tools are in sight. A popular French saying for this you may have heard before is, “Mise en place”, which in English translates to “Put in Place”.
How to make Everyday Breakfast Tacos
Since we are only using one pan to make this recipe, the order in which we prepare everything is important. Doing so in the correct order, will avoid unnecessary cleanup and ensure a smooth stress-free cooking experience.
Follow these 4 simple steps using the same pan:
Step 1 – Preheat the pan and prep your ingredients.
Step 2 – Toast your tortilla until browned. Set aside.
Step 3 – Add oil and cook bell peppers until softened. Set aside.
Step 4 – Add butter and scramble the eggs. Set aside.
Final Step – Assemble tacos. Congrats!
Tips and Suggestions

Everyday Breakfast Tacos
Equipment
- small frying pan
Ingredients
- 2 medium flour tortillas
- 2 large eggs
- 1 tbsp butter
- 2 tbsp plain greek yogurt any fat %
- ¼ cup habanero cheddar cheese grated
- ½ tbsp olive oil
- 1 small red bell pepper sliced into strips
- 1 small avocado pitted and sliced into strips
- ½ cup green lettuce shredded
- 2 tbsp salsa homemade or storebought
- 2 tbsp green onions thinly sliced
- salt and pepper to taste
- Hot sauce/chilli flakes optional, additional spice
Instructions
- Heat a small frying pan over medium heat.
- While the pan is heating up, chop and slice all of your veggies.
- Once the pan is hot, toast each flour tortilla until golden on all sides.
- Set the toasted tortillas aside on plates.
- Add the olive oil, sliced bell peppers and a pinch of salt to the same hot pan. Saute until the bell peppers are slightly soft.
- Set the cooked bell peppers aside.
- In the same hot pan, add the butter and begin to scramble the eggs.
- Turn off the heat and set eggs aside. Season eggs with salt and pepper to taste.
- Time to assemble, by dividing each ingredient evenly on each taco.
- Layer each tortilla as follows: a spread of Greek yogurt, a sprinkle of spicy cheese, scrambled eggs and sauteed bell peppers. Topped with the lettuce, sliced avocado, green onions and salsa.
- Finish with hot sauce of choice or chilli flakes if desired.
- Serve immediately and enjoy!
