Tahini Chocolate Chip Cookies

Ingredients

  • ¾ cup all-purpose flour
  • ½ cup coconut sugar
  • 1 tsp baking powder
  • pinch of salt
  • 1 tbsp melted coconut oil or olive oil
  • ¼ cup tahini
  • 2-3 tbsp unsweetened non-dairy milk I used almond
  • ¼ cup vegan chocolate chips I used Enjoy Life brand

Instructions

  • Preheat the oven to 375° and line a baking tray with parchment paper.
  • In a large bowl add the flour, coconut sugar, baking powder, and salt. Stir until combined.
  • To the same bowl add the oil, tahini, and almond milk.
  • Using your hands, mix until a thick dough forms. If the mixture is dry, add another splash of almond milk.
  • Add the chocolate chips and fold them into the dough with your hands.
  • Shape eight puck-like cookies with your hands and place them on the lined baking sheet, ensuring enough space in between for expansion.
  • Place the tray in the oven and bake for 10-11 minutes until golden. Remove from oven and let cool for a few minutes before eating.
