Ingredients
Cinnamon Baked Apples
2applespeeled, cored and, chopped into bite-size chunks
1tbspcoconut sugar/brown sugar
1tbspwater
½tbsplemon juice
½tbsparrowroot powder/corn starch
1tspcinnamon
pinch ofsalt
Oatmeal
½cupoats old fashioned
¾cupalmond milkunsweetened
⅓cupapple sauceunsweetned
1-2tbspmaple syrup
1 tbspchia seeds
1tspcinnamon
⅛tspginger
⅛tspginger
pinch ofsalt
Instructions
Preheat the oven to 375° and mix all the baked apple ingredients together in a small baking dish, to coat.
Bake for 30 minutes, until apples are pierced easily with a fork and a thick sauce has formed. Remove from oven and let cool.
Just before the baked apples come out of the oven, start the oatmeal.
Place all oatmeal ingredients in a small saucepan over medium heat, stir, and bring to a light boil. Reduce the heat, stirring often until oats thicken to desired consistency.
Pour oatmeal into bowl and top with baked apples, walnuts and a drizzle of maple if desired.
