This recipe reminds me of an apple crumble, but for breakfast and healthier. But don’t worry, If you wanna eat this with some vanilla ice cream, I totally understand.
Heart-healthy, creamy oats, fiber-rich, perfectly sweet baked apples, and walnuts for some omega 3’s and texture; this breakfast is somehow guilt-free.
Baked Apples + Cinnamon Oatmeal with Walnuts
Ingredients
Cinnamon Baked Apples
- 2 apples peeled, cored and, chopped into bite-size chunks
- 1 tbsp coconut sugar/brown sugar
- 1 tbsp water
- ½ tbsp lemon juice
- ½ tbsp arrowroot powder/corn starch
- 1 tsp cinnamon
- pinch of salt
Oatmeal
- ½ cup oats old fashioned
- ¾ cup almond milk unsweetened
- ⅓ cup apple sauce unsweetned
- 1-2 tbsp maple syrup
- 1 tbsp chia seeds
- 1 tsp cinnamon
- ⅛ tsp ginger
- ⅛ tsp ginger
- pinch of salt
Instructions
- Preheat the oven to 375° and mix all the baked apple ingredients together in a small baking dish, to coat.
- Bake for 30 minutes, until apples are pierced easily with a fork and a thick sauce has formed. Remove from oven and let cool.
- Just before the baked apples come out of the oven, start the oatmeal.
- Place all oatmeal ingredients in a small saucepan over medium heat, stir, and bring to a light boil. Reduce the heat, stirring often until oats thicken to desired consistency.
- Pour oatmeal into bowl and top with baked apples, walnuts and a drizzle of maple if desired.
